Location & how to get there
25 minute walk from the main pottery street
5 minute drive and free parking is available (look out for this sign and drive up the hill to reach the restaurant)
Bar car: Approximately 2 hour drive from Tokyo
By train: Take the shinkansen from Tokyo Station to Utsunomiya Station (52 minutes) and take the bus from Platform 14 for 58 stops (58 minutes) to 益子参考館入口 and walk for 14 minutes
Meet the chef
Chef Daisuke and his team have been specialising in using wild boar (inoshishi) in efforts to help create a more sustainable and ethical response to the large number of wild boars in Japan
They carefully prepare it to ensure that the flavours are rich and flavourful without being overpowering
The majority of their wild boar meat is sourced from Chiba and in 2023 there were around 35,000 wild boars in Chiba that were captured of which only 5,000 were used for meat with the rest being discarded
